Weetabix all dressed up!

This is the only breakfast cereal that I like to eat because it’s low in salt, sugar and fat and high in fibre. With a little added goodness it makes a brilliant start to the day. You can vary the fruit depending on what is in the fruit bowl … a sprinkling of dried fruit works well (but contains lots of sugars).

Poached egg with avocado and tomato

because you can never have too many egg recipes!

Pork saltimbocca with jacket potatoes

This meal not only tastes amazing but it also looks great too! The perfect dish for impressing friends or for brightening up a dreary mid-week dinner!
Chicken, Recipes

Chicken and brown rice stir-fry with peppers, pak choi and green beans

A delicious stir-fry that is easy to make and is packed with colour and goodness.  I always find a stir-fry is a great way to get the kids to eat veggies that they wouldn’t normally try!

Sardine and spinach fishcakes with a side salad

This recipe is the perfect quick, easy and cheap store cupboard dinner as it is made with tinned sardines (which are packed with omega 3 and vitamin D).

Filled jacket potato and a simple side salad

Sometimes there is nothing more comforting than a baked potato.

Perfectly seasoned potato wedges

Delicious as a side, topped with a chilli or as a late night snack! These perfectly seasoned wedges are one of my go to dishes when I can’t think of what to cook or I haven’t got much time.
Curry, Fish, Recipes

Fish finger curry from the Thali Cookery School

A tasty recipe from an Indian cookery school that is local to me: this is the owner’s favourite childhood recipe and one that she loves to cook for her own children. The original recipe uses shop bought fish fingers instead of salmon fillets.

Slow-cooker saag aloo with yogurt and chutney

I love a good slow-cooker recipe but I prefer the type where you just throw everything in – this recipe is just that. It makes a tasty side-dish but is also good served as a vegetarian (or vegan) main. I love it served with a sprinkling of fresh coriander

Butterbean hummus pots

My new snack. I made a batch of the hummus and then split between my ramekin dishes. I then added my carrot batons and popped them in the fridge in an attempt to keep me away from the biscuit tin!

Barbeque salmon with rainbow rice

Salmon is my favourite fish – you can do so much with it! This recipe is a firm favourite with the kids and is a great way to encourage them to up their oily fish intake!
