I love miso - it's one of those flavours that is hard to describe so I'll just call it delicious! It pairs perfectly with salmon making this a fabulously simple and utterly delicious dinner. And it is super quick to cook especially as I chose to use a packet of precooked grains (you can obviously cook your own if you wish!)
A salad should always more than a couple of leaves! They need to be bursting with flavour and colour and full of goodness - this one ticks all of the boxes!
These gorgeous little fritters are a great source of protein and an easy lunch/dinner option. Served topped with an egg or with some avocado and seeds or some roasted vegetables, they really are a delicious treat!
And, they can be batch cooked and frozen - separate layers with greaseproof paper to stop them from sticking.
A dinner that is ready in less than 15 minutes - what's not to love?!?
