Ingredients: Oil; 450 g chicken thigh fillets (cut into strips); 300 g mushrooms (sliced ); 5 tbsp pesto (red or green); 1 onion (diced ); 180 g orzo; 2 garlic cloves (peeled and minced); 2 tsp dried basil (if using fresh add at the end); 400 g tin of chopped tomatoes; 400 ml chicken stock; ¼ tsp chilli flakes; 100 g spinach (roughly chopped ); 50 g parmesan; Salt; Pepper
