Think Spain in a bowl of pasta and this is what you get! Deliciously smoky and creamy and the recipe makes extra sauce which is perfect for freezing.
A pasta sauce that is hiding 7 different fruits and vegetables:tomatoes, carrots, aubergine, courgette, onion, pepper and garlic are roasted with olive oil, dried oregano and a dash of balsamic vinegar.
When I discovered frozen mashed potato, my whole life changed!! You can of course make your own, but I never have time for all that peeling, chopping, boiling and mashing!!
This is how you take a humble (some might say dry) chicken breast to a whole new level: you stuff it and then you wrap it in pastry!
