This is a great dinner that the kids can make themselves. You can add anything you want for the toppings: ham, salami, chicken, spinach, pesto, peppers, sweetcorn, basil, chillies, olives, pineapple… the options are endless! Children love personalising their own pizzas; I just lay out the ingredients and let them get creative – my only rule is that it has to contain at least one vegetable!
I try and get as much fruit and vegetables into my diet – I also try and get a lot of colour in it! This baguette has both: bursting with flavour it is a great lunchtime dish.
A great recipe for when you are short of time: serve topped with grated cheese with a side of wholegrain rice, use it as a jacket potato filling or make it into chilli-cheese nachos!
I don’t often have sandwiches for lunch, but sometimes I really fancy one! This baguette is a real favourite of mine – with hummus, mozzarella and tomato it is definitely made to impress!
