Light, refreshing and full of texture. This recipe serves four as a side, but you can double it up and make it the main dish!
These gorgeous little fritters are a great source of protein and an easy lunch/dinner option. Served topped with an egg or with some avocado and seeds or some roasted vegetables, they really are a delicious treat!
And, they can be batch cooked and frozen - separate layers with greaseproof paper to stop them from sticking.
Classic flavours make this a comforting dish of deliciousness!! It's easy to make in advance: prepare up to the point of putting in the oven and put in the fridge/freezer.
When cooking, defrost and pop in the oven for 10 minutes (foil on) and then 10/15 minutes foil off.
Curry does not have to be complicated: this is a simple version which still tastes great.
It freezes really well so is a great recipe to batch cook.
