If I had to chose 1 salad to eat for the rest of my life, this would be it! The recipe calls for cooked chicken – the best way is to roast a whole chicken and then cool and slice: use in the salad and for other lunches.
A light, crunchy summer salad that is bursting with goodness, flavour and texture. It's lovely on its own as a main dish but also makes a fabulous side (I love it with a summer BBQ).
Curry does not have to be complicated: this is a simple version which still tastes great.
It freezes really well so is a great recipe to batch cook.
