It’s easier than you think to spatchcock your own chicken: all you need is a pair of sharp kitchen scissors! The great thing about cooking a chicken this way, is that it takes a lot less time than traditional roasting and you can cook it on the BBQ.
This dish was born when I was short of time and had no breadcrumbs in the freezer! The onions are an amazing addition and it is now a firm favourite in the Gillies household!
