This is one of those dishes that I make and then wonder why we don't have it more often! It is a great way of using up leftover veggies but, you can also cook the veg and make them (frozen mash is the way forward if you are doing this!!)
This is my children’s favourite breakfast and is often what they choose on their birthdays! I must admit though, I love it for lunch!
