Sweet potato brownies
A little healthy twist on a classic – and no, you can't taste the sweet potatoes!
Ingredients
- 100 g butter
- 200 g dark chocolate broken into chunks
- 300 g sweet potato peeled, cubed and cooked (I use the microwave)
- 125 g soft brown sugar
- 2 eggs whisked
- 2 tsp vanilla extract
- 100 g self raising flour
- 25 g cocoa powder
Instructions
- Heat the oven to 180° and butter and line a square 20cm tin
- In a large pan, melt the butter and chopped chocolate over a low heat, stirring regularly
- Put the sweet potato and sugar in a blender and blitz until smooth
- Add the sweet potato to the melted chocolate and butter
- Slowly mix in the beaten egg, then the vanilla extract
- Mix in the flour and cocoa powder
