Sweet potato brownies

A little healthy twist on a classic - and no, you can't taste the sweet potatoes!

Ingredients

  • 100 g butter
  • 200 g dark chocolate broken into chunks
  • 300 g sweet potato peeled, cubed and cooked (I use the microwave)
  • 125 g soft brown sugar
  • 2 eggs whisked
  • 2 tsp vanilla extract
  • 100 g self raising flour
  • 25 g cocoa powder

Instructions

  • Heat the oven to 180° and butter and line a square 20cm tin
  • In a large pan, melt the butter and chopped chocolate over a low heat, stirring regularly
  • Put the sweet potato and sugar in a blender and blitz until smooth
  • Add the sweet potato to the melted chocolate and butter
  • Slowly mix in the beaten egg, then the vanilla extract
  • Mix in the flour and cocoa powder
