Sweet potato brownies
A little healthy twist on a classic - and no, you can't taste the sweet potatoes!

Ingredients

butter

dark chocolate
broken into chunks

sweet potato
peeled, cubed and cooked (I use the microwave)

soft brown sugar

eggs
whisked

vanilla extract

self raising flour

Instructions
Heat the oven to 180° and butter and line a square 20cm tin
In a large pan, melt the butter and chopped chocolate over a low heat, stirring regularly
Put the sweet potato and sugar in a blender and blitz until smooth
Add the sweet potato to the melted chocolate and butter
Slowly mix in the beaten egg, then the vanilla extract
Mix in the flour and cocoa powder
