Slow cooker leek, potato and cauliflower soup
I love this soup: it has the classic leek and potato feel with the creaminess (and protein hit) provided by the beans and a bit of extra goodness from the cauliflower. And yes, you can cook it on the hob: just soften the veg in a little oil or butter and then add the other ingredients and simmer until the potatoes and cauliflower are tender.
