A lighter stew that can be eaten in the summer as well as in the winter. I am serving it with couscous, but it is just as good with a side of vegetables or some freshly baked bread.
This can be eaten on its own as a delicious lunch dish or makes the perfect side. And, as if it could get any better, there is no cooking involved - just some chopping, shaking, opening and mixing!
