So good, even my salad averse teenage son like them! Bursting with colour and flavour, these pitta pockets are the perfect midweek meal.

A great alternative to a classic meat lasagne and a step up from your usual vegetable one! The aubergine and pasta combo is perfect .. this could well be my new favourite lasagne!
