This is a great way to use up leftover rice – I often cook extra just so I can have a dinner or lunch of this!
A stir-fry is one of those easy mid-week meals where you can literally raid the fridge and throw anything in! Although I have specified the veg in this version, feel free to go rogue!
An easy roast dinner that is all cooked in one tray (apart from the Yorkshire puddings). I like to serve it with a generous serving of gravy - I’m a massive fan of Jamie Oliver’s Get Ahead Gravy and use the chicken carcass from each roast to make a new batch (which I then freeze).
Delicious for breakfast, brunch, lunch or as a light dinner – a definite family favourite!
