The best chocolate brownies

The perfect chocolate brownie should be firm on the outside and deliciously gooey on the inside: just like these!

  • 250 g caster sugar
  • 100 g self raising flour
  • 90 g cocoa powder
  • 60 g icing sugar
  • 100 g white chocolate chips
  • 1 tsp salt
  • 2 eggs
  • 125 ml olive oil
  • 2 tbsp water
  • ½ tsp vanilla extract


  • Preheat the oven to 160℃ and line a 8×8 baking tray
  • Combine the sugars, flour, cocoa powder, chocolate chips and salt in a large bowl
  • In a separate bowl, whisk together the eggs, olive oil, water and vanilla
  • Add the wet mix to the dry and stir until fully combined
  • Pour the batter into the prepared tray and bake for 45 minutes
  • Cool completely before slicing and sprinkling with icing sugar
