I find that halloumi is a great alternative to meat in a burger – it’s one of my go to veggie protein sources. The hummus adds another punch of goodness and tastes delicious with the salty halloumi and sweet chilli sauce.

Eaten straight away or allowed to cool completely and popped in a lunch-box for later, this is a delicious dish. The harissa gives a middle-eastern twist and the pomegranate molasses add a wonderful sweetness.
Another of my classic comfort foods! You can cook the potatoes in the microwave if you are short of time (don’t add the oil and salt), but I prefer them to be slowly cooked in the oven.
