I made this super easy omelette on a Monday morning as it is a great way to use up leftovers from your roast dinner! Not only is it tasty fresh out of the oven for breakfast, it also makes a delicious lunch when served cold with some salad.
Easy and nutritious! And you can add anything you fancy: try smoked salmon, ham, cherry tomatoes, red onion … the options are endless!
because you can never have too many egg recipes!
My lovely friend Sara is vegan; this lovely scramble is a dish she served me for breakfast… a great egg alternative! Delicious served on its own but even better with a slice of sourdough toast!
