Slow cooker creamy chicken pasta
In an attempt to reduce my energy costs, I am trying to use my slow cooker more and that is how this dish was born! It only takes a couple of horus and is a perfect meal to prep in advance (you can do the prep and either pop it in the fridge or in the freezer until you are ready to cook).
Ingredients
Part 1 ingredients
- 3 chicken thighs cut into chunks
- 2 red peppers deseeded finely sliced
- 75 g bacon lardons
- 2 tbsp red pesto
- 3 garlic cloves peeled and minced
- 1 tbsp dried oregano
- 150 ml chicken stock
Part 2 ingredients
- 350 g pasta dried
- 500 ml chicken stock
Part 3 ingredients
- 200 ml Greek yogurt
- 100 g chopped spinach
To serve
- 50 g parmesan grated
Instructions
- Put all of the part one ingredients in the slow cooker (or in a freezer bag if you are prepping it in advance)
- Put the lid on the slow cooker and cook on high for 2.5 hours
- Remove the lid, add the pasta and stock (part 2 ingredients) and give everything a good stir
- Pop the lid back on and cook on high for 45 minutes
- Remove the lid and add the spinach and Greek yogurt (part 3 ingredients) – stir so that the spinach begins to wilt
- Pop the lid back on for a final 5 minutes
- Remove the lid and give everything a good stir before serving
- Serve with a grating of parmesan
