Sausage casserole

Although the time looks lengthy, this really involves minimal effort!

  • Oil
  • 8 sausages
  • 500 g passata
  • 2 onions peeled and sliced
  • 2 garlic cloves peeled and minced
  • 2 sweet peppers deseeded and sliced
  • 200 g potatoes (I use a mixture of white and sweet) diced – you want them nice and small so they cook
  • 2 tsp dried paprika
  • 2 tbsp tomato puree
  • Salt
  • Pepper
  • 400 g tin of cannelini beans drained
  • 2 handfuls spinach


  • Heat a little oil in a large casserole dish – brown the sausages and then set aside on a plate
  • Add the onions to the casserole dish and fry until golden (8 minutes)
  • Add the garlic, peppers, potatoes, paprika and tomato puree – give everything a good stir
  • Return the sausages to the dish and pour over the passata – bring to the boil and then reduce the heat to a gentle simmer
  • Simmer for 30 minutes with the lid on
  • Remove the lid and simmer for another 30 minutes
  • Taste and season if necessary
  • Add the cannelini beans
  • Replace the lid and simmer for a final 30 minutes
  • Stir through the spinach and serve
