Sausage casserole
Although the time looks lengthy, this really involves minimal effort!
Ingredients
- Oil
- 8 sausages
- 500 g passata
- 2 onions peeled and sliced
- 2 garlic cloves peeled and minced
- 2 sweet peppers deseeded and sliced
- 200 g potatoes (I use a mixture of white and sweet) diced – you want them nice and small so they cook
- 2 tsp dried paprika
- 2 tbsp tomato puree
- Salt
- Pepper
- 400 g tin of cannelini beans drained
- 2 handfuls spinach
Instructions
- Heat a little oil in a large casserole dish – brown the sausages and then set aside on a plate
- Add the onions to the casserole dish and fry until golden (8 minutes)
- Add the garlic, peppers, potatoes, paprika and tomato puree – give everything a good stir
- Return the sausages to the dish and pour over the passata – bring to the boil and then reduce the heat to a gentle simmer
- Simmer for 30 minutes with the lid on
- Remove the lid and simmer for another 30 minutes
- Taste and season if necessary
- Add the cannelini beans
- Replace the lid and simmer for a final 30 minutes
- Stir through the spinach and serve
