Chilli tofu noodles

I am always looking for good vegetarian dishes.  To pass the test in my house, they need to be
bursting with flavour – this one got the thumbs up all round!

Fish gratin with peas

A take on a classic fish pie. This is a simpler version as there is no mashing – slicing is much easier (especially if you have a mandolin!)

Pork meatballs in tomato and lentil sauce

This recipe is a real hit with my family; the children love the meatballs because they are softer than those made with beef mince and I love the sauce because it is packed with nutritious ingredients.  It is definitely a dinner for the whole family and can be adapted for slight differences in taste; the kids like it with rigatoni pasta and cheddar whereas my husband and I prefer whole-wheat spaghetti, parmesan and generous sprinkling of chilli flakes.

It’s a great recipe for batch cooking as it freezes really well – perfect for grabbing out of the freezer when you haven’t had time to think about dinner!

Easy one-pot roast chicken

An easy roast dinner that is all cooked in one tray (apart from the Yorkshire puddings).  I like to serve it with a generous serving of gravy – I’m a massive fan of Jamie Oliver’s Get Ahead Gravy and use the chicken carcass from each roast to make a new batch (which I then freeze).

Spinach and tomato macaroni cheese

A delicious twist on the classic mac and cheese. This is a great recipe to teach the kids – the one in the photo was made by my thirteen year old.

Sausages with beans

This is a great dish if you are looking for something different and healthy to do with a pack of sausages; I like to use good quality pork ones from our local butchers, but you can use any type you like…including (especially for all my vegetarian friends) a veggie variety!

Delicious eaten on its own as a low carb meal, or served with some buttery mashed potatoes and greens…enjoy!

Red lentil cottage pie with peas

A twist on the classic cottage pie; this version uses lentils instead of beef but doesn’t compromise on flavour

Tuna steak fajitas

Sometimes it can be hard to think of alternatives to your much-loved meat dishes; this tuna fajita is just that!  It’s lighter and fresher than a traditional one and tastes amazing!

Chicken lasagne and salad

This recipe was born on a cold rainy day when I really fancied some ‘comfort food’.  I had a look in my pantry and found some lasagne sheets; but I had no minced meat, I did however have chicken.  And that is how my Deliciousandreal Chicken Lasagne was born.

Harissa lamb and sweet potato tray bake

The combination of sweet potatoes and spicy harissa gives this dish a delicious twist.  And the fact that it is a traybake makes it the perfect mid-week meal!
