Pasta alla norma

This is one of the most well-known Italian pasta dishes – it is simply pasta with an aubergine and tomato sauce.  Adding some of the pasta water to the sauce is a great tip:  it adds flavour, glues the sauce and pasta together and thickens the sauce.

Classic chilli con carne

A classic dish: I like mine served with rice, grated cheese, coriander, a side of sliced avocado and maybe a dollop of Greek yogurt!

This recipe uses the cup method for cooking rice – I have put approximate measurements but these will vary depending on the size of the cup you choose! Whilst the rice is cooking you mustn’t be tempted to remove the lid – it needs to steam and if you don’ t soak the rice (or use white rice), your cooking times will vary.

Garlic chicken with paprika wedges, roasted tomatoes and tender-stem broccoli

I’m always looking for new ways to cook chicken: this is one of my favourites!  What’s not to like?  Creamy garlic, crunchy breadcrumbs, sweet tomatoes and earthy broccoli!

Lemon and caper sea-bass with chips and peas

This is a really easy fish recipe with a super simple, zingy dressing!  The timings may vary slightly depending on the thickness of your fillets, but don’t be tempted to cook the fish for too long – less in definitely more when it comes to cooking fish!

Butter chicken the Delicious and Real way!

This butter chicken recipe is mild, but can easily be spiced up with some extra chillies (my husband and I always add a sprinkling to ours!) I like mine served with a dollop of aubergine chutney and a sprinlking of fresh coriander.

Toad-in-the-hole with roasted potatoes and onion gravy

Classic comfort food!  As a family we love Yorkshire puddings (they are definitely not just a beef accompaniment in our house!), so this has to be a family favourite!
