This is the ultimate healthy comfort food! It's great for lunch or dinner and, if you don't want chips, you can always try a different side: toast, a jacket potato or salad... just add whatever you fancy!
Preheat the oven to 180°C and arrange the chips in a single layer on a baking tray (you may need to use 2) -pop them in the oven for 40 minutes turning half way through
Heat some oil in a large, lidded pan. Cook the onion, pepper, carrot and courgette for 5 minutes
Add a splash of water and give everything a stir. Turn down the heat and cook for a further 10 minutes with the lid on
Add 1tbsp of the Cajun seasoning and cook out for a minute until fragrant.
Add the tomatoes, beans and marmite and simmer for 20 minutes
Serve the beans on top of the chips – finish off with a sprinkling of grated cheese

Pop the extra Cajun seasoning in a jar in the fridge - it's great for BBQ season
You may have extra beans left - you can either pop in the fridge for up to 5 days or it freezes really well
