Cajun beans and homemade chips

This is the ultimate healthy comfort food! It's great for lunch or dinner and, if you don't want chips, you can always try a different side: toast, a jacket potato or salad... just add whatever you fancy!

Ingredients

  • 4 medium potatoes cut into chips
  • Oil
  • Salt
  • Pepper
  • 1 onion peeled and diced
  • 1 red pepper deseeded and diced
  • 1 carrot diced
  • 1 courgette diced
  • 1 tbsp cajun seasoning make your own - see below
  • 400 g tin of chopped tomatoes
  • 400 g tin of cannelini beans drained
  • 2 tsp marmite
  • 100 g cheddar cheese grated

Cajun seasoning

  • 1 tbsp salt fine
  • 1 tsp caster sugar
  • 2 tbsp smoked paprika
  • 1 tbsp garlic powder
  • 1 tbsp dried oregano
  • 1 tsp turmeric

Instructions

  • Preheat the oven to 180°C and arrange the chips in a single layer on a baking tray (you may need to use 2)  -pop them in the oven for 40 minutes turning half way through
  • Heat some oil in a large, lidded pan. Cook the onion, pepper, carrot and courgette for 5 minutes
  • Add a splash of water and give everything a stir. Turn down the heat and cook for a further 10 minutes with the lid on
  • Add 1tbsp of the Cajun seasoning and cook out for a minute until fragrant.
  • Add the tomatoes, beans and marmite and simmer for 20 minutes
  • Serve the beans on top of the chips – finish off with a sprinkling of grated cheese

Notes

  • Pop the extra Cajun seasoning in a jar in the fridge - it's great for BBQ season
  • You may have extra beans left - you can either pop in the fridge for up to 5 days or it freezes really well
