Chopped salad with mozzarella and a simple dressing
I love this salad as it contains lots of different colours and textures. It makes a great side but is tasty enough to be the main event at lunchtime!

Ingredients

red onion
Peeled and diced

red pepper
deseeded and diced

cherry tomatoes
quartered

cucumber
diced

little gem lettuce
diced

spinach
roughly chopped

fresh basil
roughly chopped

ball
mozzarella
diced
For the dressing
8
tbsp
olive oil
½
tsp
salt
freshly ground black pepper
Instructions
Put all of the chopped salad ingredients in a large bowl and toss together
Put the oil, salt and a good grinding of pepper in a bowl and mix well
Drizzle the dressing over the salad and toss together
Serve
