Chopped salad with mozzarella and a simple dressing

I love this salad as it contains lots of different colours and textures.  It makes a great side but is tasty enough to be the main event at lunchtime!

Ingredients

  • 1 red onion Peeled and diced
  • 1 red pepper deseeded and diced
  • 100g cherry tomatoes quartered
  • ½ cucumber diced
  • 1 little gem lettuce diced
  • 100 g spinach roughly chopped
  • 20 g fresh basil roughly chopped
  • 1 ball mozzarella diced

For the dressing

  • 8 tbsp olive oil
  • ½ tsp salt
  • freshly ground black pepper

Instructions

  • Put all of the chopped salad ingredients in a large bowl and toss together
  • Put the oil, salt and a good grinding of pepper in a bowl and mix well
  • Drizzle the dressing over the salad and toss together
  • Serve
