Rock cakes

This is my mum's recipe and reminds me of being a little girl. There is something rather comforting about these cakes!

Ingredients

  • 100 g butter softened and cut into chunks
  • 225 g self raising flour
  • 1 tsp cinnamon
  • 75 g soft brown sugar
  • 60 g sultanas
  • 40 g apricots
  • 20 g desiccated coconut
  • 1 egg beaten
  • Splash milk

Instructions

  • Preheat the oven to 180°C and line a baking tray
  • Put the butter in a bowl, add the flour and cinnamon
  • Rub the butter and flour together, with your fingers, until it resembles breadcrumbs
  • Add the sugar, fruit, coconut and egg; stir with a spoon
  • Add a little milk to bring the mixture together
  • Use an ice-cream scoop (it’s the perfect size) to put mounds of the mixture onto the lined baking tray
  • Bake for about 15 minutes or until golden brown
  • Transfer to a cooling rack and allow to cool

Notes

Play around with the flavours:
  • Add different dried fruit or some flax seeds
  • Leave out the fruit and add some chocolate chips 
  • Try mixed spice instead of cinnamon
