American pancakes

We love these for a lazy Sunday morning breakfast and the best thing is, you can mix it up and change the flavours each week - they do say variety is the spice of life!!!

Ingredients

  • 200 g self raising flour
  • 1 tsp baking powder
  • 1 egg
  • 300 ml milk
  • 150 g your chosen flavour mashed banana, chocolate chips, chopped pineapple, blueberries
  • 1 tbsp caster sugar
  • 2 tbsp Butter
  • Syrup for drizzling
  • Extra fruit and yogurt to top optional

Instructions

  • Put the flour, baking powder, egg and milk in a jug; whisk (I use an electric one as I find it makes them extra fluffy)
  • Add your extra ingredient and the sugar; stir
  • Heat 1 tbsp of butter in your frying pan; when it is bubbling pour in 4 'rounds' of the mixture to create 4 pancakes
  • Cook for 3 minutes over a medium heat (you will see small bubbles appear on the surface of each pancake, then turn and cook another 2-3 minutes
  • Pop them in the oven on low while you heat some more butter to make another 4 pancakes
  • When you are ready to serve, plate up 2 pancakes, add some fruit and a drizzle of syrup
  • Enjoy!
