These are a firm favourite with my family and friends - they really are the best cookie recipe! You can easily double up the quantities and freeze half of the dough for another day.

Ingredients
115gbuttersoftened and cubed
100gwhite sugar
100gsoft brown sugar
1eggbeaten
½tspbaking powder
1tsphand hot water
¼tspsalt
210gplain flour
170gchocolate chips
Instructions
Heat the oven to 180°C and line a baking tray with greaseproof paper
Put the butter and sugars in a large bowl and cream (mix until combined and fluffy)
Beat in the egg into the sugar and butter mixture
In a small bowl, dissolve the baking powder in the hand hot water
Add the dissolved baking powder and the salt to the mixture
Stir in the flour and the chocolate chips
Drop 12 spoonfuls of the mixture onto your prepared tray - make sure they are spaced out
Bake for 10 minutes
For chewy cookies allow to cool on the baking tray for 5 minutes before transferring them to the cooling rack (for a crisper texture, transfer straight away)
