Sausage casserole

Ingredients
Oil

sausages
500

passata

onions
peeled and sliced

garlic cloves
peeled and minced

sweet peppers
deseeded and sliced

potatoes (I use a mixture of white and sweet)
diced - you want them nice and small so they cook

tsp
dried paprika
2
tbsp
tomato puree
Salt
Pepper

tin of cannelini beans
drained

handfuls
spinach
Instructions
Heat a little oil in a large casserole dish – brown the sausages and then set aside on a plate
Add the onions to the casserole dish and fry until golden (8 minutes)
Add the garlic, peppers, potatoes, paprika and tomato puree - give everything a good stir
Return the sausages to the dish and pour over the passata – bring to the boil and then reduce the heat to a gentle simmer
Simmer for 30 minutes with the lid on
Remove the lid and simmer for another 30 minutes
Taste and season if necessary
Add the cannelini beans
Replace the lid and simmer for a final 30 minutes
Stir through the spinach and serve
