Pasta alla norma
This is one of the most well-known Italian pasta dishes – it is simply pasta with an aubergine and tomato sauce. Adding some of the pasta water to the sauce is a great tip: it adds flavour, glues the sauce and pasta together and thickens the sauce.
Peasants’ pasta
This is my take on the classic Italian dish ‘pasta e fagioli’ (or pasta with beans); it is an Italian dish originally for the poor as it is made with inexpensive ingredients. Bursting with flavour and goodness, this dish can be either served as a soup or as a pasta dish… just add more or less pasta depending on which you prefer!
Cherry tomato and kale pasta
A delicious meat-free Monday pasta that is bursting with goodness. I find that pasta is a great vehicle for getting more vegetables into your diet; my kids are more likely to eat (and try) them if they are served in pasta dish as opposed to on the side of the plate.
