This curry dish works well as a main or as a side; simple to make and even easier to eat! It’s a fairly mild dish, but you can always add more curry powder and chillies.
I cook a lot with lentils as they are an excellent source of fibre, protein and a host of vitamin.
My family love a curry so I am always playing around with flavours to try and create a different type. This recipe is great for getting some oily fish into your diet and makes a change from our usual chicken varieties!
I love a good slow-cooker recipe but I prefer the type where you just throw everything in - this recipe is just that. It makes a tasty side-dish but is also good served as a vegetarian (or vegan) main. I love it served with a sprinkling of fresh coriander
