If I had to chose 1 salad to eat for the rest of my life, this would be it! The recipe calls for cooked chicken – the best way is to roast a whole chicken and then cool and slice: use in the salad and for other lunches.
Another way to serve this delicious aubergine and red lentil sauce - the other recipe uses tagliatelle; this one turns it into a super cheesy pasta bake.
This is a delicious dish which combines the smoky goodness of aubergine with the sweetness of tomatoes. And don’t worry if certain family members don’t like aubergine … they won’t even notice it is there!!
