Name: Sticky Greek chicken with rice and mixed veg

Ingredients: 2 tbsp oil; 1 tbsp lemon juice; 1 tbsp honey; 1 tsp dried oregano; 1 tsp dried basil; 2 garlic cloves (peeled and minced ); 1 tsp salt; 12 chicken drumsticks (you can use thighs if you prefer but they may take longer to cook ); 1 carrot (finely diced); 1 courgette (finely diced); sea salt; freshly ground black pepper; 350 g rice (I use brown basmati – soaking rice prior to cooking reduces the cooking time); 100 g frozen peas (defrosted ); 1 lime; Salt; Pepper; 50 g feta cheese (crumbled ); 50 g sliced black olives
