Ingredients: 350 g wholewheat pasta; oil; 1 onion (finely chopped); 1 red pepper (deseeded and finely chopped); 2 cloves of garlic (peeled and minced); 2 tsp dried basil (you can use fresh if you prefer - add at the end if doing so); 400 g tin of chopped tomatoes; 1 tbsp tomato puree; 1 tsp sugar; 180 g smoked mackerel fillets (skin removed and cut into chunks ); 100 g spinach (roughly chopped); salt; pepper; 75 g cheddar (grated )
