This is one of the most well-known Italian pasta dishes – it is simply pasta with an aubergine and tomato sauce. Adding some of the pasta water to the sauce is a great tip: it adds flavour, glues the sauce and pasta together and thickens the sauce.
A delicious meat-free Monday pasta that is bursting with goodness. I find that pasta is a great vehicle for getting more vegetables into your diet; my kids are more likely to eat (and try) them if they are served in pasta dish as opposed to on the side of the plate.
