Roasted red pepper and tomato pasta
This is a great pasta sauce for using up any vegetables that you have lurking in your fridge! I’ve used courgette, onion and pepper, but you can literally use any vegetables that you fancy (or that need using up!) It is quick an easy to prepare and much tastier (and healthier) than any jar bought sauces.
My kids love pesto pasta but it has to be a healthy version packed with nutrients, colour and texture. I always use whole-wheat pasta and I sometimes make my own pesto (*see the recipe) but time doesn’t always allow for homemade so I always have a jar in the cupboard!
I love a pasta salad - perfect for packed lunches, picnics or a side dish.
